Hello all, today has been the day! Yes my chocolate covered cherries have been made and bagged ready for friends and family. This seems to have become a little tradition of mine. I know my sons expect these to be made.
Here is a little look into the process
It all begins a couple of months before Christmas, I buy pitted cherries which are frozen, I allow them to defrost then add them to a jar with a bottle of Brandy and this year another jar with Amaretto. I leave them to sit and let the alcohol soak into the fruit.

Today the cherries were taken out of their jars and spend a few minutes in a dish to allow some of the liquid to come out, There's nothing worse than a runny cherry lol. As you can see the some of the Brandy has left the fruit but there is plenty still left.

From here I add a cherry to each space in an ice cube tray and add 2 tea spoons of melted chocolate to each cube. You can move the cherry about to get the chocolate to cover the whole cherry.
The trays are put in the fridge for around 30 minutes or until set, remember to mark which flavour is which.
